The Easiest Crinkle Cookie Recipe Ever.

HAPPY NEW YEAR! I hope you all had a wonderful Christmas and New Year celebration filled with lots of love, laughter, and delicious food. All of our festivities ended today which is bittersweet - I'm sad that all the gatherings are over but happy to be back to somewhat of a routine. I had no sense of what day of the week it was for the last two weeks because of all the festivities!

Last year, I made homemade nutella sea salt fudge for friends and family as gifts and this year I made crinkle cookies! They are really easy (but messy) to make and I can attest to this as I overslept this morning from late night NYE festivities and only had one hour to prep, bake, cool, and package 50+ cookies!

The secret ingredient in this recipe is cool whip and i'm not sure who the original recipe creator is but whoever he/she is, is a genius! There are only 4 ingredients and the result is a heavenly smelling batch of cookies that are slightly crunchy on the outside, soft and chewy on the inside. It was hard to stop "taste testing" them! 
In a large bowl, use a wooden spoon to mix 1 box of cake mix (I like using this one), 8oz of fat free cool whip, and 1 egg. Once it is fully mixed, use a small spoon to drop cookie batter into a bowl of icing sugar and form into a ball. Bake for 10-12 minutes at 350 degrees. Cool on pan for a few minutes then fully cool on cooling rack. Yield is about 50 cookies using a 1/2 tbsp to scoop out dough.

- Make sure your hands are dusted with icing sugar before rolling the dough into balls as the dough is very sticky!
- Leave sufficient space between each cookie on your pan as it expands quite a bit. I learned this after making my first batch as the cookies all stuck together and made one giant rectangular "cookie".
